It's more complex than you'd expect, has a richer mouthfeel than most Prosecco and evolves over time. Flavours of green apple, zesty lemon lead to elderflower and orange blossoms. The mousse on this is really rich and delightful, almost creamy.
A copper colored 3 day skin contact Pinot Grigio. Hand picked and produced in small quantities on the family's farm in the hills of Friuli. Lush aromas of wild strawberry, acaia blossoms and pecorino cheese hint at it's complexity. On the palate, a racy minerality is tempered with lush tropical fruit such as papaya and lychee and a mid palate of quince. Typical flavours of bitter almond skin and Apline honey lead to a round mouthfeel. Critically acclaimed white blend from the volcanic slopes of Mount Etna. Vineyards are between 650-900 m above sea level, lending great acidity and structure. Blend is primarily Carricante and Catarratto with a touch of Grecanico and Minella. Soft press, low temperature fermentation in steel vats. The resulting flavour is crisp and fresh with a good punch of minerality. “Chablis-esque”. Polished and slender, with some savoury characters and a serious bone dry finish that lingers on the tongue.
