We like spicy so we add a chipotle pepper and a tablespoon or two of adobo sauce. We also shred a rotisserie chicken and add it to the casserole. My favorite rotisserie chicken is at Costco! You can't buy a whole chicken and cook it for their price.
We don't use chorizo ... we use a mild, and sometimes hot Italian sausage. If you have a Sprouts in your area, their Italian sausages are amazingly tasty! This meal is easy to fix, is really good, and healthy!
I know - bagged chicken nuggets? But really this casserole tastes a lot like chicken parmesan. I eat gluten free - and this is the best way to eat GF nuggets! It's a satisfying supper with spaghetti (or rice noodles) and a salad.
Cook rice on the weekend - it works best in fried rice if it is cold. Chop any veggies in your fridge - celery, carrots, squash, zucchini, etc plus onion and garlic. Use frozen peas and/or corn as well. Throw in any leftover meat! Scramble an egg. Make extra it's great leftover! Another favorite from our family.
My family loves pork shoulder! I like this "plain" recipe. One night we have BBQ sandwiches. Another night we have carnitas on tortillas. We use any leftovers in a rice bowl.
I love to bake potatoes in the crock pot - white ones and sweet ones! A loaded baked potato makes a filling meal. Consider putting leftover meats and veggies on top!
I made this recipe last week. It's not thick like chili - it is more like soup. It has a terrific flavor - not spicy at all. My family approved of it!
